Shallot Dip

We had this awesome shallot dip from Schwartz's on shabbos and I was wondering if anyone has a recipe for a shallot dip- It tasted like creamy carmelized shallots and was amazing.

definitely mayo, but it just tasted like carmelized shallots in dip form- It was really good and I would love to duplicate it and use it in Roast beef sandwiches or turkey wraps.

Try carmalizing shallots let cool

Add mayo and any spices (salt garlic etc.)

Blend in food processor or hand blender

So I tried this last week but ended up burning the shallots- so no dip
this week I cut up 4 shallots, tossed in some olive oil and roasted them at 350 turning every 20 minutes or so until golden all over- it took about 1 hour and 20 minutes ( I think)
then I added about 1/3 cup mayo, some salt and a drop of pepper, some garlic powder, about 1 tsp balsamic vinegar and about 1/4 cup olive oil and blended it for a few minutes with my immersion blender- It was really yummy but not perfect- next week I will try it with only about a tablespoon of mayo to emulsify it and up the olive oil a bit. Will report back.
