I have done meatballs in mushroom sauce. Bake meatballs. Pour 2 recipes of mushroom sauce over the meatballs. Serve.
You can do the same with a thickened veg sauce. Saute onion and garlic, add diced/shredded veggies. Thicken with starch/liquid/seasoning. Delish.

Thanks! Going to use your recipe!
Quote: | I sometimes do non-tomato "gravy".
Don't have exact measurement, but finely chop (best done with a food processor)
2 large or 3 medium carrots, 1 onion, 1 stalk celery (optional). Sautee in a big
pot with 1 tbsp oil, salt & pepper for about 15min till carrots/onions are cooked (they turn
more yellowish rather than orangeish). Then I add about 2-3 cups of water, 1-2
teasp of parve chicken soup or onion soup powder. Check the seasoning--you can add
paprika or soysauce or honey (if you want it sweeter). I usually drop the uncooked
meatballs and cook the whole thing for about about 45min. Good to fool the kiddies
about eating veggies, you can add other chopped veggies like zucchini or red peppers. |
Going to add mushrooms too. Do I need to thicken it if I want to serve it over spaghetti?

No, mine comes out like regular gravy/sauce-y consistency. Just don't add too much water if you're concerned, or leave the lid off and let liquid evaporate. You can definitely add mushrooms or whatever other veggies you want for extra flavour.
