I just figured out this recipe a few weeks ago, and already made this several times. It's really good.
soak 1 cup of green lentils- ideally 12 hours before cooking
saute one large onion
add 1 cup rice
add lentils
add water:
1 cup for the lentils plus water for the rice
(rice according to type- brown rice needs ~2.5 cups water, white rice needs less)
1 can of mushrooms(don't skip it)
salt and pepper to taste
medium flame until boiling, low flame until water is cooked out (should be about 20 minutes), leave covered to steam for 10-20 minutes.
enjoy! this freezes well too.

I make a rice and lentils dish using onions, peppers and carrots. Then I also add chili powder and cumin. I'm happy you posted because we were in need of a different way to make this- thank you!

November - would you mind posting the exact recipe. It sounds like something my family would love. We are also big lentil fans. Kalsee, your recipe sounds yummy too. I make majadara which I think is pretty similar.

Happy To:
1/2 cup chopped red pepper
1/2 cup chopped carrots
1/2 cup chopped onions
saute in oil for few minutes
1/2 cup lentils
1/2 cup white rice
saute raw with vegetables
add 1/2 tsp chili powder and 1/2 tsp cumin
add 2 cups of water
bring to a boil, cover and simmer for 12 minutes
Add 1 cup peas (frozen- will work better if they are at least somewhat defrosted)
cover and continue to simmer until water is absorbed and rice is tender
add salt and pepper to taste
p.s. I don't pre-soak the lentils

Thanks! I'll have to leave out the peas though b/c DH is not a fan. Won't look as pretty w/o them

You write to bring to a boil. Are you supposed to add water first? If yes, then how much?

I edited the recipe
This recipe is not so "sensitive," meaning you can add fresh mushrooms, celery, change up the veges- it's forgiving and yummy. If you like is spicier, put more chili powder. Sometimes I don't have chili powder so I add paprika. My husband puts Tobasco. It also calls for 1/4 raisins to add at the end, but we never do. Sometimes I don't have peas and don't put the peas, but I prefer the taste with the peas. I use the frozen ones- not from a can.

Thank you ladies for these lentil dishes! I’ve been making perfect cooked lentils in my instant pot and I eat it with rice. These recipes sound like they can take it up a notch.

Sure. Just adjust the cooking time to package directions (usually takes 50 minutes stovetop for brown rice).
