Crunchy Chick pea salad

1 can of chickpeas
olive oil ( 1 tbsn)
cumin, tumeric, curry powder, cardammon, garlic powder, paprika, cayenne pepper (pretty much any spice you like in your spice cabinent)
1/4 cup of Post Grape Nuts cereal
Chopped up cucumber
Techina
Lemon


Mix chickpeas with spices and oil, and add cumber and grapenuts cereal. Top with a dollop of techina and squirt of lemon juice. Tastes like falafel but without all the frying and fat! Very Happy

I have been eating this for lunch for awhile and it is SOOOOOOOOOOO filling and yummy!

Is this a salad that you must make and eat right away? I'd think that the Grapenuts would get mushy after a little while.

Because its so easy to prepare , I usually make it and then eat it right away. The grapenuts are really crunchy and dry and it would take a long time before they would get soggy and mushy, ( my estimation)

you can crack a tooth on Grape-nuts! Very Happy
But when you mix it in, its just right!
