My father-in-law will be in rehab for nearly a month. We are going to visit him the 1st days Pesach and I would love to bring him something as he has a HUGE sweet tooth. Unfortunately, he is also diabetic. Does anyone know of anything I could make for a diabetic? The poor thing will be living on mostly frozen Pesach airline meals.

That's so kind of you! Are you specifically looking for sweet recipes? Would he like spiced roasted almonds? You can buy kosher lpesach artificial sweeteners and make meringues- that doesn't need any starch.

I don't know if it's available for Pesach, but DH's diabetic grandmother loves sugar-free chocolates.

Same here...

I"m looking for a recipe using no potato starch almond meal is ok and artificial sweetner. Something with cocoa would be good and nuts are fine too.

Thinking of trying this with xylitol

I modified this recipe,
Since we only use things we can peel, I made it with pear instead of dates.
I doubled the recipe and used two firm pears and just pulsed them into the mix in the food processor according to the recipe.
Can't say I followed it exactly, ie. no baking soda, no stevia and just regular alprose baking chocolate. But
The tiny slice I had to taste was pretty good.

do you eat non gebrokts mixes? There are a gazillion sugar free mixes for brownies and cakes etc here. Add water and eggs and bake. Also there are plenty of ready made sugar free stuff

Thank you marina. We don't use bought products so the mixes wouldn't work but appreciate the idea.
This link had some nice recipes but didn't see any for cake. But we appreciate your response nevertheless.
