3/4 c potato starch
1 1/4 c ground almonds
1 cup sugar
1 tsp baking powder
1 tsp baking soda
1tsp cinnamon
1/2 tsp salt
1c oil (or 1/2 c oil+1/2 c applesauce)
4 eggs 1/2 c kelp maple syrup
2 small zucchini peeled and shredded
Preheat oven to 350
In large bowl, combine starch, almonds, sugar, baking pwd, soda, cinnamon, and salt.
In separate bowl, combine oil, eggs, and syrup. Stir into dry ingredients until just moistened. Fold in shredded zucchini.
Fill lined muffin cups to top.
Bake 30 min.
For 9x13 pan, bake 1 hr, and a little less for 9 in round
