I just breaded chicken w Pashkesz Pesach crumbs, with some added herbs. I remember that I liked them last year. I thought they were browned lady fingers but they have no sugar. Ingredients are Potato starch eggs and shortening. I wonder if theres a way to make something similar myself.

try it ... I imagine they brown the potato starch in a pan - I would add the spices - I think sometime before it's done so the flavour infuses ... I also imagine it would have to be watched like a hawk stirring constantly making sure it doesn't burn - and I would also use olive oil - but not enough to get the starch too wet or I imagine it would be a mush instead of crumbly

Im sure you can make them just play around with the ing till workable then bake and when cool crush in food processor

There is a patchke recipe in the newest Schapira-Dweck cookbook.
I think that you can also take soup nuts and process them. Mashed potato flakes or crushed potato chips can also work for coating.
