Homemade mayo questions

Hi,

I'm making mayo for the first time and want to know the following:
How long does it keep for?
Cannot be frozen?

I have a question. All I have is an electric hand mixer. Has anyone successfully made mayo like that? Do I need a food processor? Anyone have a recipe?

Keep in the back of the fridge, coldest place. In fact, store in two separate pint containers or smaller, so you don't keep taking out & putting back the same mayo.

I think I've done w a hand blender (meaning manual, not electric!) on YT when we ran out. You need a couple of strong sons w good pitching arms. Most ladies (well, unless they're used to lugging around heavy babies) are going to tire out. You have to really beat constantly. Unless you mean handheld electric. Should be fine.

that should be fine. drizzle the oil in VERY slowly.

1 egg
1 splash vinegar/lemon juice
salt
pepper
1-1 1/2 C oil

combine everything except the oil. drizzle oil in very slowly (and I mean VERY SLOWLY) while running your mixer. if you add it too quickly, it won't thicken properly.

If you are using an immersion blender it's very simple. Put all the ingredients into a tall container then insert blender and blend on high speed. The mayo should come out nice and thick. It's much easier than having to drizzle in oil.
