We haven't gotten this thread up yet?
Here's mine, as always, subject to change:

Erev: fried cauliflower, veg. soup, hot dogs.

Seder 1:
Seder food (karpas, maror, etc.)
Chicken soup
Zucchini potato soup
Green salad
Brisket and potatoes
Broccoli kugel
Butternut squash
Lemon meringue pie
Pesach "yodels"

Lunch 1 (dairy):
Fish
Matza pizza, matza brei, cream cheese, lox
Spicy ratatouille with quinoa

Seder 2:
Chicken soup
Spaghetti squash and meatballs
Leftover brisket and potatoes
Asparagus
Popcorn cauliflower
Fresh pineapple sorbet
Chocolate chip cookies

Lunch 2 (a lot of guests):

Gefilte fish
Salmon with lemon mayo sauce
Big roast prepared in smoker
Suteed mushrooms in wine
Zucchini creole
Potato kugel
Coleslaw
Green salad
Avocado/palm hearts salad
Chocolate mousse
Meringues

sounds yummy , imasinger. good for you.
my menu is so much simpler this year, and I am serving only a main and dessert at the seder. I will not even bother to post it because it sounds so unexciting!

Seder:
Makkos treats
Seder foods
Deviled eggs
Boiled chicken and organic carrots in a fruity sauce
Rice with turmeric and fresh coriander
Jerusalem kugel (made with corn noodles)
Homemade chocolate covered matza for afikoman

Lunch:
Hummus and schug
Beef brisket (#8) and broccoli in DD's awesome sauce (coconut milk, onion, garlic, fresh ginger, fresh coriander, cumin, salt and pepper)
Leftover rice and JM kugel
Chocolate chip cookies
Cornmeal blondies

duck sauce chicken and potatoes
Two tone cabbage salad
Side dish?

Lunch:

Salmon & dips
shoulder roast with potatoes
Sweet n sour cutlets
apple kugel
Coleslaw

I need dessert ideas that I can make without a mixer. Anyone?

really happy right now that I live in e"y with only 2 meals to cook for Very Happy

Seder

Fish
Meat & Onion Soup
Sweet & Sour Corned Beef
Brisket with Potatoes and Carrots
Southern Fried Chicken
Potato Kugel or Scalloped Potatoes?
Cranberry Apple Kugel
Salads - undecided

Dessert
Hot Brownies with Ice Cream
Chocolate Chip Cookies

Lunch the next day will pretty much be whatever is left over from the seder.
I'm on a special restrictive diet so I get none of the above :-(. Lots of food preps just for me - chicken, roasted vegetables, vegetable kugels, carrot muffins, etc. etc. etc.

The brisket really stumped me. I always bake it in a great sauce and we can only do the stovetop for seder. I also couldn't really do a sauce because the corned beef is in a sweet & sour glaze and I thought it would be too similar.

So it's not my favorite recipe because I always prefer it in the oven, but it is super-soft so that's nice. I boil it in water and add spices to my liking. (Garlic powder, onion powder, etc. Yes, I do put in soup mix, I know everyone is cringing now) I boil it covered on a low flame until it's butter soft. Halfway through I throw in potatoes and carrots. (I imagine you can use other vegetables as well) That's really it.

Southen fried chicken: I use bottoms only so it doesn't dry out on the platta by the time Shulchan Orech rolls around. I dip in egg and then in a mixture of matzah meal, potato starch, and spices. I fill a narrower pot with oil, deep fry (not to high so that outside doesn't burn while the inside is raw!) and drain on a paper towel.

Chrain
• 1 lb. horseradish root
• 2 medium beets
• 1/4 cup sugar
• salt to taste (or 5 tsp table salt)
• lemon juice to taste (or 1 cup Pesach vinegar)
Peel the horseradish root and beets and cut into 1-inch chunks. Grind fine in electric grinder, blender, food processor, grater or juicer. The juicer produces the least amount of tears. If using a juicer, the pulp will be fine, almost powdery - simply mix it back into the juice.
Combine sugar, salt and lemon juice and add to combined horseradish-beet mixture. Refrigerate in tightly covered glass containers.
NOTE: If root is not crisp, refresh it by soaking in cold water overnight in the refrigerator before grinding.

My kind of girl. I also only serve soup by the seder. Maybe some dips and I'm still debating about the fish. For dessert, the afikomen Very Happy . One year we had a guest for the seder, so I made more food. As he was leaving he said he's so full, there was so much food. I said we usually only serve soup, but since he was coming, we had more. He said he would have been happy with just soup Very Happy . My dh just told me we're having a guest over for the second seder, a different guest, but I'm not making anything else because this guy doesn't eat anyway.

Brisket in wine sauce with root veggies
Brownies

Lunch:
Eating out with some lovely friends

Tuesday night/Wednesday--Chol Hamoed. Probably Omelets, deli, Tuna, salads, etc. We plan to go on a tiyul, so anything we can pack easily.

I love living in E''Y. This is my first chag here, and it's SO MUCH LESS WORK. Just one of the many reasons…
