try googling gluten free carrot muffins & see what you get. (I am not sure if you can substitute potato starch directly for things like rice flour, but GIYF!)
Please let us know if you find s/t good. I am in the mood for a change too, but if I start looking it will turn into a major research project... maybe later when I finish the mending, the laundry, etc.

One year I made a muffin recipe for Pesach; thinking it would be good for breakfast. It was way too eggy. One of the variations was to add carrots.
If you want to try it, it's in the purple Lub Pesach cookbook, The Spice and Spirit.

I googled passover carrot muffins, this is the one that works best for me.
10 carrots
5 eggs
1 Tbsp potato starch
1 cup sugar
1 Tbsp vanilla sugar
¼ tsp cinnamon
⅛ tsp salt
¼ cup oil
cook carrots until soft. drain from water and either mash or blend.
combine the rest of the ingredients by hand. Pleace into muffins or into loaf pans.
bake on 350 until toothpick comes out clean.

Is that 1 cup potato starch, or really just a tablespoon?

I use loose carrots which are generally larger than the ones that come in a bunch or a bag is there any measurement with that recipe for how many cups of cooked carrots?
