Fudge Bombs

3 cups confectioner's sugar
1 tbsp. vanilla sugar
2/3 cup cocoa
1/8 tsp. salt
½ cup egg whites (approx. 3 eggs, but must be measured)
1½ cups chocolate chips

Preheat oven to 350. Line 2 cookie sheets with parchment.

In a bowl, whisk together sugars, cocoa and salt. Add 2/3 of egg whites. Mix. Add remaining egg whites and mix until combined. Batter should be thick and glossy. Stir in chips.

Drop spoonfuls of batter onto cookie sheets about 5 cookies per sheet (note: I put them much closer -- around 10-12 per sheet and it was okay). They spread while baking.

Bake for 12-14 minutes until tops look lightly cracked.

Cool completely on baking sheet. Do not move them until cool. Freezes well.

Adaptation in Chocolate Moose's 123 Cookie Post:

123 Cookie with Coconut - tastes like macaroons.

1 cup sugar
2 eggs
3 cups coconut

Drop by spoonful onto baking sheet and bake until slightly brown (about 15 minutes).

I added chocolate chips.

From a Lakewood Magazine (Voice of Lakewood)

Nut-Free Chocolate Biscotti

6 eggs
1 1/2 cup dutch cocoa
1 container confectionery sugar [I used the tub they were selling in our store]
1/2 cup potato starch
1 6 oz package unsweetened ground coconut
2 - 4oz package unsweetened coconut flakes
1/2 tsp salt
2 bags chocolate chips

beat eggs. Add cocoa, sugar, starch and salt. Mix well. Mix in coconut and choc chips.
Refrigerate for an hour.
Shape into logs on parchment paper.
Bake for 80 minutes at 350.
Let cook 20 minutes. Slice. Bake for another 30 minutes to dry biscotti

- you can bake as cookies. Drop by tablespoon and bake shorter

Sorry I'm not linking to the originals but I had these saved on my computer.

The fudge bombs are really good, soft and chewy cookie. I had luck removing them from the paper after freezing.

MY family liked the 123 coconut cookie with chocolate chips. They thought it tasted just like macaroons.

The biscotti is a hard cookie. Not all of them cake out so pretty. but it is good with coffee and doesn't have too strong of a coconut cake even though it has a lot in it.

Thank you also should add no whipping egg whites only using a fork and a bowl:) Matza meal is fine

So, if I don't happen to have confectioner's sugar, any way to still make the things that call for it? Would regular sugar totally not work?
