I use this recipe year round as I am on the Paleo diet which is gluten and grain free. I enjoy it a lot, it is way better than Pesach rolls made with matzah meal IMO and it doesn't get stale quickly, you can add cinnamon and raisins to it or cinnamon raisin bread and can slice it and use it for any sandwich or make french toast with it. It is a bit spongier than bread but when you can't have regular bread, this is really pretty good.
I used this recipe with some Pesach modifications today

Here it is typed out with my changes:
Paleo Bread
1 C blanched almond meal (ground as finely as possible, you can use with skins if you want)
1 C tapioca or potato starch
4 tablespoons ground coconut
1/8 C ground walnuts
¼ teaspoon salt
½ teaspoon baking soda
5 eggs
1 tablespoon coconut oil (can use another oil)
1 tablespoon honey
1 tablespoon apple cider vinegar (can use another vinegar)
Place almonds and walnuts, tapioca, coconut, salt and baking soda in a food processor
Pulse ingredients together
Pulse in eggs, oil, honey and vinegar
transfer batter to a greased 7.5 x 3.5 magic line loaf pan (I used a disposable English cake pan)
Bake at 350° for 30 minutes
Cool in the pan for 2 hours
Serve
optional: add 2 T cinnamon and 1/2 C raisins to mix (and additional sweetener if you want) for cinnamon raisin bread
