My ds asked me to make a lot of charoset because he loves it. Now that the Seder is over, I have too much leftover. I couldn't find a recipe I liked to make with it, so I made it into pancakes/latkes. I added matza meal, eggs, sugar, and a little oil and fried them. They're not bad, but probably a lot better with applesauce, but we don't have any.

great invention
if you have apples you can cut them up & cook them in a pot - they turn into applesauce - nothing else needed

one year I made apple blintzes out of the extra charoses...I cooked up the charoses and thickened it with some potato starch...they were amazing!

I know but no apples and applesauce taste best cold imo and besides the latkes are all gone.

Glad you found something tasty to make with it. One year I had so much leftover and I improvised a cake recipe with it. It was not good.
