I need recipies or ideas please. It's a chicken bottom that's slightly off the bone. When its done properly its supposed to taste like a veal cutlet.

1/4 cup brown sugar
2 tsp ginger
2 tsp tarragon
1 tsp cinnamon
1 tsp black pepper
1 tsp garlic
1/2 tsp salt [I don't really add salt to kashered meat/poultry]
mix together spread on the meat & let it marinade - then grill or broil on both sides
