I just found out that one of my guests will only eat chicken (no meat, deli etc.) and I have no way to heat up food for Shabbos day.
Personally, I don't like cold chicken. Any ideas? I can't exactly serve cold shnitzels.

Actually, a lot if people serve cold schnitzel shabbos day. You can 'fancy it up by stacking chicken fingers on a toothpick with rolls of turkey / deli and a cherry tomato on the top.
Some people actually put chicken in their cholent.

Do you serve cholent? Why not put the shnitzel on top of the pot Shabbos morning to heat up? Or just take it out early & serve it at room temp.

You can do chicken nuggets with a dip, either a honey-mustard type dip or a hot buffalo sauce type dip. Or any other dip!
It's fine at room temperature, just take out about half hr before the meal

In response to the recipe request for Chinese Chicken Salad:
Here's a teriyaki style Chinese Chicken Salad... yes, I know teriyaki is Japanese so...
let's call it
Teriyaki Chicken Salad
Marinate for at least 15 minutes and up to an hour:
1 lb boneless skinless chicken breasts in
1/2 cup soy sauce
1/2 cup sugar
1/2 cup sake or dry white wine (you can leave this out if you don't have any)
Optional: about 1/2 teaspoon grated fresh ginger
Pat the chicken breasts dry. Save the marinade.
Fry the chicken breasts in a wok or frying pan in 1/2" of oil just until cooked through. Flip over 1 time while frying.
Drain. Cool. Slice against the grain into thin strips.
While the chicken is cooling, in a small saucepan boil up the marinade along with the juice from a can of pineapple chunks. Boil for one minute only. This will be the dressing.
Prepare a bed of fresh spinach leaves.
Top with chicken strips.
Garnish with drained canned chunk pineapple and
Drained canned mandarin orange segments (or fresh in season).
You can prepare the chicken and dressing on Friday and assemble everything on Shabbos day.
You can play around with the recipe... e.g., you can use cold cooked ramen noodles as the salad base instead of spinach.

Thank you! I like the idea of putting shnitzel to heat up on the crock pot. But if I bake my shnitzel instead of frying it, will it dry out on the crock pot?
And the chicken salad recipe sounds great! I'm definitely going to try it another time (but over something other than spinach).

Growing up my mother used to serve this chicken salad-thing shabbos day. Basically she would put out a tray of pasta with cold, poached chicken cutlets layed out nicely on top and around the tray would be sliced peppers and snow peas. On the side or drizzled on top was a peanut sauce. Definitely not your typical shabbos cuisine but a pretty display and very yummy.

I have definitely heated baked chicken on the crockpot. never had a problem (I use mayo to coat shnitzel when I bake it, instead of egg)

Coronation chicken salad or Pesto chicken salad.
I've posted recipes before.
They go very nicely for summer/warm weather Shabbat lunch and can be prepared beforehand.
After all if it's good for Her Majesty, wouldn't it be good enough for your Shabbat table?

many people I know like cold schnitzel ... with strudel ~ these are a few of my favorite things ...
you make a salad & slice long strips & lay it atop said salad ...
