Has anyone started planning their Shavuos mens, would like to get a headstart and start cooking some stuff that can be frozen

I plan on making lots of stuff in advance and only leaving salads, pasta, vegetables and salmon for last minute.
I'm not sure about everything but this is my preliminary. Hopefully I'll also get ideas from other people and maybe change things that I didn't make yet. I"m going to be working up to yom tov and its been really busy lately so I want to be really organized, plus I'm having guests for the whole yom tov.

Night 1 - Milchig Meal

Blintzes
Blueberry Sauce

Butternut Squash Soup
malawach pinwheels

Salmon Fillet
Eggplant Parm (No Fry)
Pasta
Zucchini Quiche

Greek Salad

Cheese Cake
Iced Coffee

kiddush
Cheese Cake

Day 1

Sushi Salad (with leftoever salmon)

Beef bundles in sauce (Bais Yaakov Cookbook)

Yapchik or Meat and Roasted baby potatoes??
Cucumber sugar snap pea Salad
Red cabbage salad

I've posted this before, its easy and very good. (and I don't fry, so its good that it is baked) I'm planning on making the chicken cutlets this Sunday and freezing. I'm going to freeze the sauce separate and then on yom tov pour the sauce over the chicken and reheat before the meal.

Sesame Chicken
mix cornflake crumbs with salt, pepper, paprika, and garlic powder.
Clean and dry 2 1/2 lbs chicken cutlets.
Cut into nugget sizes.
Dip chicken in egg and then the cornflake crumbs.
Bake in a grease baking pan at 370 for about 25 minutes or until done.

mix:
1 cup duck sauce
1/2 cup soy sauce
1/2 cup brown sugar
1/2 cup sesame seeds

Pour on top of chicken and reheat until heated through.

I didnt start making a menu but I would love a few of the recipes if it wouldnt be too difficult to post them.

Blueberry Sauce (from Dining In)
1 1/2 cup blueberries
3 tsp Cornstarch
1/2 C Sugar
3 T. lemon juice
mix in pot. Bring to boil. Simmer 15 minutes. Mix every so often so there are no lumps.

Zuchhini Quiche
This is light and dairy free so I like as an alternative during a heavy meal
Cook 2 Squash
Mix in a bowl:
1 onion sauteed (optional)
2 eggs
1 Tbsp sugar
3/4 cup bread crumbs
1/2 can mushroom
garlic, pepper, and salt to taste

Mix everything with mashed squash. Pour into pie shell. Bake 1 hour.

I make cucumber and carrot curls to go with it using a pealer. It really comes out pretty.

Beef bundles in sauce
This recipe is from Bais Yaakov cookbook but I see chocolate moose already typed .

Tri Color Fries - ra mom posted this recipe for Pesach and it went over really well at my house.

Remove the sweet potato and parsnip baking sheet, and leave the beets in the oven to bake for another 6 minutes.
Toss all three colors of fries together with the kosher salt. Serve immediately.

Meat Pepper roll ups (Bais Yaakov Cookbook)
I like to double the sauce for serving

1 cup soy sauce
1/2 cup brown sugar
2 lb sandwich steak, cut into 1 1/2 inch strips
kosher salt
ground black pepper
4 scallion, green tops cut into 3 inch long strips, whites cut into 1/8 inch rings (I leave this step out)
1 green pepper, sliced thinly into 3 inch matchsticks
1 red pepper, sliced thinly into 3 inch matchsticks
1 yellow pepper, sliced thinly into 3 inch matchsticks
1 Tbsp olive oil

mix soy sauce and brown sugar. reserve 1/2 and set aside.
Dip piece of beef in soy sauce mixture. sprinkle with salt and pepper.
place 2 pieces of scallions and one of each pepper across the shorter length of the beef, so that vegetables extend over both edges about 1/4 of an inch. Roll the meat around the vegetables and skewer in the center with a toothpick, set aside and repeat with remaining beef and vegetables.
Lightly brush a grill pan with olive oil or heat the oven broiler. Grill or broil beef rolls, brushing with sauce and turning often until medium rare, 2 to 4 minutes.
[I broil them in my oven until done]
Bring reserved 1/2 cup marinade to a boil, simmer 3 - 5 minutes. Pour into a small bowl and add scallion rings and serve on the side as a dipping sauce.

I found two old menus, it will be made of the same things



risotto, crêpes (slim big pancakes), blintzes, sotlatshiko, cheese cakes, pizza, salty tart with tomatoes and goat cheese ("tourte"), corn with butter, smoked salmon and advocado, cupcakes of pasta with grated cheese (cheese is "hardened" through cooking).

yes, Ruchel do you mind explaining hte difference between the poylish and yekke cheesecakes? I think Italian would be made with Ricotta cheese right ?

ok, so I think I'm done with my menu,

unless I end up having company for other meals, then will add more things

Tues nite

baked eggrolls w/ sauce

pastrami wrapped chicken
smashed potatoes
garlic roasted cauliflower

Wed day having over 3 couples with kids

mini blintz bites

pizza bubble ring
penne ala vodka
mini pizzas
spinach spaghetti pie
salmon
veggie, cheese skewers
salad
iced coffee

nougat ripple cheesecake
triple layered cheese squares
brittle cheese cups

Wed nite

smoky split pea soup w/ dumplings

corned beef
cabbage and noodles
broccoli kugel muffins

Thurs day

individual sushi salad

delmonico roast
pastrami stuffed shells
garlic mashed potato knishes
grilled veggie salad

haven't thought about extras, but will do some baking also

I ripped this out from one of the recipe supplements from a magazine, not from this year

pancake
1 1/3 c flour
2/3 c yellow cornmeal
1/4 c sugar
4 tsp. baking powder
1 tsp. salt
2 eggs
1 1/3 c milk
1/4 c oil

combine all ingredients in order, mix just until combined.

spray frying pan with spray and heat over medium heat

drop by tspn.ful to form small pancakes

when tops bubble and bottoms are set, flip and cook for 1 minute on the 2nd side

cheese filling
1 lb. farmer cheese
1 egg
1 T vanilla sugar
1/2 c sugar

combine ingredients, using an immersion blender

to serve, place a dollop of cheese mixture on each pancake. top with blueberries, kiwis, or fruit of your choice, serve with a swirl of maple syrup

I actually saw a real recipe, but don't remember where, I'll have to search again

it was oil and sliced garlic, salt, paprika mixed with the cauliflower, roasted in the oven

I'm not sure I didn't decide which recipe to use,

there's one in the BY Cookbook, honey garlic delmonico roast

basically you broil the outsides first so they get a nice crust and then bake on a low temperature
