I'd like to start eating mostly plant-based meals during the week, mostly for health reasons but also to save money (though veggies aren't cheaper than pasta!). My kids like everything with cheese, so I'm thinking to maybe serve cheesy meals twice a week or something. I'm talking dinners. We don't have meat/chicken during the week at all.
I'd love to get some ideas for kid-friendly meals. I've searched the internet but wondering what your ideas were. So far I have: tofu (any great recipes?), lentils, stir-fries, soups.

You might make your own yogurt, with a crockpot. YouTube has videos about that. You can make your own cottage cheese too. I don't know if it saves money, but milk is cheaper than cheese, isn't it? You would want whole milk.

Rice and beans are complementary proteins, people say, eaten together.

Pasta isn't unhealthy in any way. It comes in whole wheat versions, I think. It isn't hard to make your own pasta, without an electric pasta maker. You would want an electric mixer and a bottle or rolling pin covered with parchment paper, to roll it out. Then you cut it into strips and let it dry. Again, consult YouTube.

Eggs are very good. They have been rehabilitated recently. A very complete and wholesome food.

If you break them onto the surface of bubbling sauce, it's shakshuka.

I have found that cauliflower is a pretty decent substitute for chicken, and even my DH (who is a massive carnivore) is a huge fan.

and it was a MEGA hit.

I make a lot of stuff from scratch (for example, onion rings, mozarella sticks, breaded cauliflower, sauces etc etc) and we all try and eat healthy.

My kids really love all different kinds of cauliflower and raw veggies so I make a lot of food based on their likes and dislikes.

In terms of moving more towards plant-based, for convenience foods, you could always look into Gardein.

If you really want vegan, I.e. no eggs and no milk, you can try potatoes. They are very versatile: in a soup, mashed, sautéed, fried, baked, boiled, etc.
