Peel and cube 1lb sweet potatoes. Peel and cut carrots in disks then halve/quarter.
Wash/check/trim green beans into 2inch sticks. Peel and finely chop 2 large onions.
Heat 2tbsp oil and toast the following: 1/2 teasp cumin, curry powder, grated fresh ginger,
sliced garlic, 1/2 teasp coriander. Add chopped onions, salt and continue cooking till onions
are soft and nearly starting to caramelise, stirring frequently (can take about 20min).
Add 2 cups water or vegetable stock, add vegetables and curry paste from the jar (yellow or
red kind, not green thai). Lower flame and continue to cook for about 20min till vegetables
are cooked. Add 1/2cup grated coconuts toward the end. Check seasoning before serving with
rice.

Yes it should, SO LONG AS you also use the jarred curry paste/sauce.
