Roasted veggies:
Slice peppers, thick slices of onion, lots of mushrooms, cherry tomatoes, zucchini, broccoli, garlic cloves.
Sprinkle with salt and garlic powder, bake at 400 15-20 min
Got this from my MIL and my husband loves it. His favorite part is mushrooms and garlics.

A small side ehich is my dh's current favorite is roasted radish. Cut in half, sprinkle with salt and rosemary, roast in oven for 25 minutes, yum! They taste amazing, go great cold or warm with other roasted veg or couscous, quinoa or any grain.

Salads (with cheese for dairy meals)
Cauliflower soup
Other veg soup
Souffles made with eggs and veggies (and cheese for dairy)

Because it may very well be a different vegetable than what we American types are thinking

I was wondering about that too. Here we have regular small radishes and large radishes that are the size of a turnip. They are sharp tasting though - does that disappear when roasted?

Lol, they are the small radishes that are quite sharp, a bit smaller than baby tomatoes, I call the big ones turnips!. I got the idea from Estee Kafree Cooking inspired, one of her recipes in her black book.
The sharpness is quite dulled on roasting, my dh says they remind him of roasted shallots, that is what he thought they were the first time I served them. They are v pretty, though probably not to everyone's taste.

Mock Lukshen Kugel (Spaghtti Squash Kugel):
1 medium spaghetti squash, halved and seeded
1 lg onion, diced
oil for sautéing
1 small red pepper, diced
4 oz. canned mushrooms, diced
3 lg eggs
salt and pepper to taste
Preheat oven to 350. Place squash, face down, in a 9x13 baking pan. Cover tightly with foil and bake 45 min or until strands separate easily with a fork. Remove from oven and cool for 15 min.
In a medium frying pan, saute onion until golden. Add red pepper, saute 5 min. Add mushrooms, saute additional 5 min.
With a large fork, scrape the squash into a large mixing bowl. Add sautéed vegetables, eggs, salt and pepper. Mix well. Pour into greased 9" round pan. bake uncovered for 1 hr. Serve hot. Reheat uncovered.
(I usually bake the whole spaghetti squash at 350 for at least an hr- I pierce holes in it with a fork so it doesn't explode- and then I cut in half and seed it after it's baked. This way, it's a lot easier to cut!)
