Question says it all! My potatoes are going bad and I dont need thenm this week. Can I peel and slice them and then put it in the freezer? I know it will probably be mushy once defrosted but I would put it in a soup that will be pureed. ok?

They will discolor and have an off texture.
Cook them now as suggested by scrabble. Either in a soup, potato kugel, potato knish kugel, etc. Something that freezes well.

Boil them or bake them, and you'll have another few days to make the soup. Or use for supper with cheese on top...

I've frozen them before then baked them it wasnt like fresh but better than throwing them out and very practical when no time to peel and cut.

I think they would lose their texture, as the starch molecule and structure would be disrupted by the freezing process, and be quite mushy when defrosted. That may not matter if you are making a soup, I've never tried.
