I'd like to make plain baked apples- no sugar, no oil- nothing (except a little cinnamon, maybe).
Can you help me with the following:
What type of apples should I buy?
At what temperature should I bake? For how long?
Do I need to put water on the bottom of the pan?

Cortland apples, if you can get them. Otherwise ask your produce manager.
Option 1 - cut the peel off the top only, take out stem, sprinkle with cinnamon and bake uncover at 350 degrees for 35-45 minutes.
Option 2 - peel and cut into quarters. Remove core. put into pyrex dish or similar with some cinnamon sticks (1 for every 2-3 apples is my guess). Cover. If my oven is on for yom tov I will bake at 250 degrees for 3-4 hours. Otherwise you have to check. This one is most like applesauce, but incredibly yummy esp. fresh from the oven.
either way, I don't use any water.

I core the apples (I've used all kinds before, they all come out good), place in a pan with a little water, sprinkle cinnamon and stuff with a few raisins for sweetness. Cover and microwave or place in oven until soft, maybe an hour.

Answering a little late here but this is what I do:
Cortland Apples
Core them
Prick them in a few places with a fork so that they don't "explode"
Sprinkle splenda (or similar) over top
Cinnamon stick in the center
Pour a can of Diet Pepsi over them
Bake at 350 - probably for an hour but check them
Always comes out delicious!
