How to make perfect mashed potatoes from sweet potatoes?

I tried making mashed potatoes using sweet potatoes. I peeled a bunch of sweet potatoes and boiled them. When it was very soft I emptied most of the water from the pot and blended it using an immersion blender. It is a bit liquidy and looked like pureed baby food.

Anyone have an exact recipe for perfect mashed potatoes like they make in restaurants?

You probably want to mash it with a fork or a masher instead of pureeing it into baby food... and you probably don't need any of the water. I would add bit of butter/marge or olive oil, and some salt and pepper. As of now, I'm not sure what you could do to save it. Maybe boil off some of the water but it's already a puree...

don't use a blender--you'll end up getting goo, whether it's white potatoes or sweet potatoes.
What you need is a masher, the one made of metal or non-stick material that has grid-like holes.

If you mash with a fork, you may have those strings, unless you start off with tiny cubes. Definitely no extra water.

Are you sure the restaurant sweet potatoes don't have any white potatoes or instant flakes mixed in? Iwouldn't be surprised...

Another option is to mix in a beaten egg after you mash the sweet potatoes, while it is still very hot. It will cook the egg and firm up the mixture a bit.

I also forgot to add that for sweetpotatoes I would wrap them whole in foil and bake till very soft (like 1hr-1.5hr at 180C) instead of boiling. That way you retain more nutrition, sweetness is enhanced and it doesn't get waterly. You can add a bit of OJ, butter/margarine/olive oil, cinnamon if you want it sweeter.

As for the blended puree, I would suggest making into soup.

Just an idea, but you could use the sweet potato purée you have accidentally made and make some sweet potato pies (spice and spirit cookbook has a good recipe).
