Does anyone have the Challah lady's recipe?

She has two. This is one of them: (I just finished making it)
5 lbs. flour
5 cups water
3/4 cup sugar
2 oz. fresh yeast or 3 TBSP dry yeast
3 eggs
1/2 cup oil
2 TBSP. salt (or 3 TBSP kosher salt)
Combine sugar, water and yeast. While the three ingredients are sitting together, sift the flour.Transfer six cups of the flour on top of the three ingredients. Add eggs, oil and salt. Start the machine on high speed. After a few minutes you should have a sticky paste. Lower speed and add the rest of the flour. allow to knead for 10-12 minutes on a slow speed. Let dough rest for 15 min. in the bowl. Give it a final spin for one more munute. Pour 2 TBSP oil on dough then transfer to a larder bowl alnd cover it. Allow it to rise for 45 min. - 1 hour. Then make bracha and braid the challahs. Allow dough to rise for another hour and egg the challah. Bake for one hour on 350.
