I understand what the OP says about the husband.

The old school way is to learn and do "by eye". My dad does that way, my grandma...

My favorite cookbooks are classics, they may surprise someone used to "NY Hungarian" a lot. They use almost only classic ingredients. Unfortunately I don't find them as translated.

The World of Jewish Cooking and Olive Trees and Honey, both by Gil Marks. Olive Trees and Honey is vegetarian. Both of them have a lot of information about the recipes and the community that they come from. I also enjoy Aromas of Aleppo, which is absolutely gorgeous. It's a Syrian cookbook, and has full color pictures, as well as a lot of information about the Syrian community.

1. The Bais Yaakov Cookbook! Amazing and basic.

2. Surprisingly, my second favorite is Susie Fishbein's Teens and Twenty-Somethings Cookbook. Lot's of innovative, fun recipes.

I love the efrat leibefroin one, I think it's called kosher elegance. It has amazing pictures in and the recepies use very simple ingredients.
