Chili casserole--put vegetarian chili in a pan, top with healthy cornbread batter, bake till golden. Freezes very well.
Brown rice seasoned like stuffing (sauteed onions and celery, poultry seasoning, onion powder, raisins, walnuts if you want) freezes well.
Kasha varnishkes.
Lentil soup, split pea soup, chili.
Bean and rice burritos.
