How do I protect my kid's mattress (and sheet) when night training?

I got the best advice ever from a long-ago neighbor:
Layer a waterproof sheet, regular sheet, another waterproof sheet and another regular sheet. That way if there is an accident at night, you can just remove the top 2 layers and go back to sleep without having to search for another clean sheet and fumble to put it on in the darkness. Do the laundry the next morning and replace the sheets during the day, well before bedtime madness.

That's like what my mother says! But she said put a sheet, a towel, a sheet, a towel.... Also prepare extra pj's easily accessible before you go to sleep
But another idea - how about a chuck? They sell them for geriatrics in pharmacies and medical supplies stores... I use them as disposable changing pads for my baby...

Towels don't protect the mattress; the liquid seeps through. And chucks bunch up and move around as your child moves in his sleep.

Good Nights disposable bed mats. The corners are sticky so they stay put.

We have used these for years...and years. They cover enough of the bed that you do not have to change sheets, and they usually stay put.
Just leave another nearby and your kid can put on a new one himself.
