I once had a recipe for soft & chewy biscottis, but I lost it. most biscottis are hard. anyone have a real good recipe for me? thanks

Biscottis are hard because after you slice them you put them back In the oven to toast. If you leave out the last step in any biscotti recipe you find you will mostly get a cookie dough batter and you can shape them into biscotti if you want that look. They will then be soft and chewy

Biscotti means "twice-cooked". If you leave out the last step to make them soft and chewy what you get may be delicious, but biscotti it isn't.

I believe to bake as bars you bake in 8x8.
but I many times will shape as a loaf - like you would for biscotti - on a baking sheet and slice after baking. And decorate with melted chocolate and nuts. They are really yummy.
It doesn't make a lot so I double it.
