Anyone have a recipe for roasted chicken with beer- or any other kind of interesting roasted chicken that you don't have to dredge in flour and cook on the stove first?

YES! do you have a bbq? or an oven that you could move the racks?
take a 16oz can of beer and pour off like 2/3 so that it doesnt explode
and a whole chicken
clean chicken inside and outside
place chicken on top of can
pour and shmear - salt, black pepper, garlic powder, onion powder, and paprika, maybe some oregeno with generous drizzles of olive oil all over chicken.
put in bbq. or oven at like 375.
it is sooooo good.

Erm. If it's ROASTED chicken, I won't dredge in flour and panfry. That would be fried chicken, no?
I don't use beer (which I think goes better with beef as in Belgian recipe).
Squeeze juice and some pulp from 1 orange, add a pinch of salt and generous pinch of fennel seed. Chop 1/2 head of smallish fennel and scatter some below chicken and some around. Roast as usual.
Whizz 1 head of peeled garlic, 1 teasp salt, 2 teasp paprika and 2tbsp oil in a blender. You'll get bright red, rather pungent paste. Rub chicken (whole or pieces) with this (best done in a ziplock bag for pieces), let it marinate for at least 1hr. Roast as usual. Garlic flavour mellows as the chicken cooks.
