Low sodium shabbos

we're having guests for shabbos, one of whom is on a low sodium diet. I need some help menu planning. so far I've got some salads without any dressing (everyone else can dress the salad at the table) and roast chicken. I guess I can serve rice with vegetables.
I need help with a starter...I think gefilte fish is probably out.

How about boiled egg slices, deviled eggs or egg salad. They can be made without salt. Guests can salt to taste.

My father is on a low sodium diet and eats gefilte fish.

When I had my parents, I made breaded chicken, Apple Kugel, and Caesar salad (dressing mayo, sugar, vinegar). And made chicken soup with no salt, just cooked for a loooong time with lots of vegetables.

thanks, kb. how do I know if the gefilte fish has alot of salt? I dont make it myself.
apple kugel's a good idea.

rachel6543, no one in my family will eat a hard boiled egg in any shape or form, so unfortunately that's out. but thanks for the suggestion.

Take that back. I just asked my father and he said he's sure there is sodium but he eats it anyway.

Maybe make some sort of fresh fish? My mother cooks salmon in lemon juice, but I'm sure there are a lot of sodium free fish recipes.

Dh makes potato kugel without salt. Black pepper and garlic powder give it good flavor. Mustard can also be used for flavor in places where you'd use salt.
Would you be ok serving gefilte fish if you could offer a second choice for the appetizer - like fruit salad?

All packaged foods have nutrition labels. It will include sodium content.
