Nothing. Really. I do the minimum anyway. I'm super lucky that my mom srmds me soup and fish and potato kugel so there is not much to make. I do like to nap but usually that doesn't work out because of dds napping schedule, not because there isn't enough time.

Ironing the boys shirts for shabbos. I always leave it for last minute. They almost look the same after 5 minutes, but I feel better when they put them on ironed.

More makeup and/or nails (as a last resort).
More often than the above it is washing the dishes.

fish. We don't really need fish AND meat. Most of the time nobody eats the fish anyway.

Same here. Unless DH steps into the breach to fold at the last minute, back into the dryer it goes.
Also nails often go by the wayside if I'm pressured.
The last thing to suffer is the menu. I'll even give up my pre-Shabbat power walk if I have to but I won't pare down the menu. Even if we're not having guests I'll have anxiety about not having enough food for Shabbat if I cut corners.
One thing I do skip is challah but that's not a last minute thing. If I'm having a very pressured week I'll decide in advance, when I'm planning my Shabbat menu, to buy instead of bake. Sometimes I'll even buy cake instead of baking but that's rarer, especially now that one of my DD"s has taken an interest in baking.

I skip farfel if I'm too busy on Fridays. Although if someone would be so kind as to teach me how to make it in the oven, I guess I can do that since it's anyway on for the overday kugel.
I also skip stuff I can do on Shabbos - I.e. put on jewelry, dress baby shabbosdig or whatever, putting out the dishes/flatware. They don't have to be done by the zman.

To make life even easier, why don't you just hide the laundry in the machine?

I take a sniff test of my kids & the least smelly ones skip their baths.

If you'd give only one bath per child, you wouldn't have this issue
