Apple Muffins for Rosh Hashana:
2 C. all purpose flour
1 1/2 tsp. bkg. powder
1/2 tsp. salt
2 tsp. ground cinnamon
2 c. diced apples ( sprinkle cinnamon and sugar on apples to taste)
1/2 c. or one stick margarine (earth balance is healthy)
1 c. sugar
2 large eggs
2 tsp. vanilla extract
1/2 c. soymilk
For topping 1/2 c. margarine or earth balance, 1/2 c. sugar, 1/2 c. ground cinnamon
preheat oven to 375. Spray muffin tins.
Mix 4 first ingredients. In separate bowl cream wet ingredients except apples and soy milk.
When mixed well add flour mixture and soy milk alternatively.
Mix and fold in apples.
Place in oven, bake for 30 mins.
When toothpick comes out clean it is done.
Let cool slightly. Remove each muffin dip in liquid margarine and then in cinnamon sugar mixture.
Let cool completely.
Your kitchen will smell delicious and you might have to put them away immediately so they don't disappear. you can make them very healthy by using organic flour, earth balance, organic sugar.
I made them sugar free for my mom by using health Garden Xylitol.
Dissolve xylitol in a drop of boiling water before using it.

Can I hijack your thread and add a recipie?
I just made diet health banana muffins for RH but they can also be apple muffins
2 1/4 cup whole wheat flour
2 t baking powder (in EY one bag of powder)
1 heaping t cinnamon
1/2 cup juice (I used orange, you can use apple)
1/2 cup water
2 eggs
1/3 cup silan or honey
2 mushy bananas (or 1/2 c diced apples and 1/2 cup diced dates
mix and bake in greased muffin tins at 375 for 20 minutes.
Delicious, no added fat. I am told you can also make them with four egg whites and no yolks.
I don't use artificial sugars and if you have a diabetic I am told you can use 1 heaping tablespoon cinnamon and no sugar at all. They don't come out that sweet then, only from the bananas or other fruit but you don't have any additives.
