I'd like to make some recipes that call for frozen spinach but I only have fresh leaves on hand.
Does anyone know how I go about this?
Number 1- How do I do it, and number 2- how do I figure out the equivalent amount to use?

It depends on the recipe, but in general you can steam the spinach until it wilts. At that point it is basically the same thing as defrosted frozen spinach. Spinach shrinks a TON, so you will probably need more than you think.

You need tons of fresh spinach to replace a little frozen.
I put it in a pot and wait a few minutes, it melts down from the heat. Then you just need to cook out the water.

I generally use 1 1/2 to 2 bunches. Don't forget to check them carefully before steaming in a pot or microwave.
