Help! I never made such a huge pot of soup before.
How much chicken do I use if I only use legs? And what about if I use a few legs and also chicken bones?
Also how long does it need to cook for? If I start cooking in the morning on erev RH is that enough time?

I prefer soup made with white meat. You don't need a lot, especially if you use a lot of vegetables.

I can use 4-5 pounds of chicken bones (my family isn't fans of boiled chicken, so I don't bother with large parts) for a 9 quart pot. That usually means I end up with 5ish quarts of broth.

I'd cook it earlier than erev RH so you can cool it enough to take the fat off the soup.

I would probably use use about 6 lbs of chicken bottoms or bones or a combination of the 2.
