Kohl rabbi and fennel question

Can I peel and cut up the kohl rabbi and the fennel, to use during Chag?
Will it turn brown?
How should I store it?

They definitely will be less crispy and might turn a little dingy looking. But not tragic.

Will keeping them in cold water, like with potatoes, help?

I've never tried cold water. Sometimes I cut up kohlrabi and fennel in advance but I dress the salads before refrigerating so it's more of a marinated type. That keeps it white but they do get less crisp, possibly from the acid in the dressing.

So, just what is the Kohl Rabbi doing with the fennel?

Using it for kaparos?

Fennel will turn brown and dry out if you just cut/shred and leave as they are.
However, I make fennel salad with shaved/shredded fennels and vinaigrette,
which can easily last 2days or so in the fridge (not longer as it gets eaten up quickly).
