I bought a corned beef, boiled it for 2.5 hours, cooled it, sliced it, poured sauce on it, and then tasted it - I think it needs to cook a bit longer - now what? do I put it in a pot of boiling water now that it's sliced & dressed? then make more sauce?

I do exactly as you described, cook for that amount of time, slice and pour glaze over. I then freeze, and after it rewarms on Yom Tov on the blech, it's perfect. I think it needs a minimum of half hour on a blech or in the oven and then it'll be fine.

Agree. The reheating will finish it off perfectly. Sometimes I'm tempted to boil it longer to get it softer, but then it falls apart when you slice. So really, you did it just right. It will be great.
