I would make timbales. They look really nice.
They baked in muffin tins, turned over onto plate for a pretty round shape, and topped with glaze that runs down the sides.

Maybe it's not fancy but I was just thinking I'd like to make stuffed zuccini (or squash or peppers or eggplant) - stuff it with a brown rice and ground meat mixture.

I use shortening. I like the way the dough comes out. I never tried it with oil. I will post the recipes I use tomorrow. They are a favorite with family and friends.

Just want to let you know that I have been there before and also only had ground meat and chicken. Roasts really are crazy expensive and ground meat is delicious.
This year I did make some roast. I have a package of ground meat in the freezer and I can't wait to cook it. Happens to be that we really like ground meat in a sweet tomato sauce more than expensive roast.
If you dont usually have sweet and sour meatballs then I would recommend that very much! Serve it over bow tie noodles .... yum! Cut up some green squash on the side .....

Two tone meat / chicken roll served with mushroom sauce if you want to be fancier is beautiful, relatively easy and delicious (and you stretch the meat further by using chicken as well)
