Need sides for someone allergic to eggs/ soy/ nuts

Can anyone give me some good recipes I can make for my guest that is allergic to eggs, soy and nuts. Thank you!

Roasted broccoli
drizzle (frozen) broccoli with olive oil, paprika, onion powder, salt, and pepper and mix. Roast uncovered for 30 minutes.

Sweet Potatoes roasted with cinnamon
Cut up peeled sweet potatoes in circles, fries, or wedges, sprinkle with cinnamon and canola oil, mix, and roast uncovered for 30 minutes or so

Bulgar or Rice with just spices should work, and you can add sauteed tomatoes and onions for a special touch.

You may have to avoid kugels for this guest but you can definitely find other filling sides!

I'm sure there are tons more ideas, these are just things I like Smile

Quinoa
Roasted veggies -- squash, cauliflower, green beans, asparagus, potatoes, sweet potatoes, etc.
Salads
Soups
Rice -- plain, pilaf, or tadeh
Sauteed zucchini, spinach, or other green veggie

rice, potatoes, quinoa, kasha, plantain, corn, any hard-shell squash, couscous, tabbouli, fruit crumbles with oatmeal, fruit, sugar and cinnamon

I make kasha without egg and it comes out yummy and not mushy if you do it right. First I toast the kasha in a dry pan quickly. Then I boil chicken broth and once it's boiling I add the kasha and follow instructions on the box to cook. It's a great way to use up extra chicken soup after shabbos. I usually saute vegetables separately and mix into the kasha once it's done (lots of onions and garlic, peppers, zucchini, celery, mushrooms are all good.

onion noodle kugel
quiche.. just skip the egg.
quinoa with sautéed mushrooms and onions
oven roasted veggies
squash with cinnamon, honey
steamed veggies
brown rice
couscous
