has anyone stored compote (or homemade pickles) in a jar? how do you do it? I heard something about making sure the seal is down and not popped up?

I assume you mean home canning so you can store preserved foods at room temperature, and not stam reusing glass jars instead of Tupperware for short-term storage in the fridge.
See http://nchfp.uga.edu/how/can_home.html for more info than you thought possible or necessary on home canning. In brief, you buy special jars and lids, sterilize them, fill them with hot food, close them, put them in a bath of boiling water, boil for a specified length of time, and cool. As the jars cool, a vacuum forms and pulls the lids tight with a popping sound. If the lid doesn't pop, the seal is not good and you must reprocess the jar or refrigerate it.
Yes, you do need all that info from the website because eating improperly home-canned food can cause serious and potentially fatal food poisoning.
