I'm a big fan of More Quich Please blog:

http://morequicheplease.com/category/pasta-2/ -- this is her pasta section, she has a pasta with butternut squash that I've tried that's yum!

Also another good resource is the kosher palette, they have a whole pasta section

Oh and another favorite - pasta spinach cheese bake (casserole but bake sounds fancier)

We're not so fancy, and I am so limited on time and ingredients, so often I'll just add in onions and black olives, with some olive oil and spices.

Alternatively, I'll fry some onions, peppers, tomatoes, and tuna with spices.

I'd love to do something dairy but my husband doesn't like it!

I love pasta with just a little olive oil, salt and pepper. Tonight we had that with mushrooms and spinach mixed in.

I like to sauté a variety of vegetables with olive oil and garlic and mix into pasta. I'll do broccli or colored pepper slices, spinach with cherry tomatoes, sliced mushrooms, squash slices, etc.

put 12 oz linguini, half box grape tomatoes cut into fourths, four minced cloves of garlic, one sliced onion, 1/3 teaspoon red pepper flakes, 2 teaspoons salt, 1/4 teaspoon black pepper and dump it all raw into a pot. add 4 and a half cups of water. bring to a high boil. boil on high for around 10 min.

Its amazing!

and I usually sprinkle parmesan cheese on top once its done, but it is optional

Honey-mustard is great.
If you have more time you can saute onions and mushrooms with garlic and soy sauce.

Pesto is one of my personal favorites (I do bow ties with pesto and add halved cherry tomatoes).

Alfredo is a great dairy option.

Yum. Mushroom stroganoff. Creamy mushroom pasta with scallions. You can make it parve and omit the goat cheese and sour cream. You can also omit the goat cheese but keep the sour cream.

We usually serve with salmon on the side.
