How do I cook a brisket without sauce so I can warm it up on shabbos day?

I wouldn't. I'd either make it in a crockpot (cooking it low overnight Friday) or serve it in Friday night. Or id make something else entirely

agree. brisket needs to slow cook in liquid to really get soft.

TIA | Cook it with sauce. Remove from sauce. Cool in refrigerator overnight. Slice.
On shabbos day, lay out slices over a silver foil on the plata in one even layer. Cover with silver foil again. Heat through. Takes very quick so make sure you do not overheat and dry out the slices.
