I have a tomato-vegetable soup on the stove right now! I just throw things in and then make my husband spice it (lol) - sauteed onions and garlic, carrots, celery, corn, potatoes, green beans, canned diced tomatoes. Will have it by itself tonight and probably with grilled cheese the next day or two.

onion soup from by cookbook - delicious and easy
another quick and easy - cube onions, zuccini (sautee first, you can also add&sautee some garlic)and a bag of frozen cauliflower boil in water and season (with whatever, I usualy add a little chickn soup mix). you can blend it or not depending on if u like ur soup chunky or smooth!
and one more - bn squash with onions and potaotes and sweet potatoes, whatever mix you wnt to do. also here, you can sautee first but I've sskipped the sauteeing and still came out good!
