We visited Israel recently and had a great olive oil based dip with zahtar/zatar spice- anyone have a good recipe to try?

We don't have a recipe, but my husband pours a little olive oil in a small dish, and then adds the spice of choice. ( This started with Zatar spice with us, but we also use others.) We dip our challah in this, and it is delicious.
