I baked some shnitzels in breadcurmbs a bit too long and they are a bit dry. I want to use them for shabbos lunch. Apart from serving them with a dipping sauce or in a marinated salad, does anyone have any idea what I could do with them?

You can make wraps with roasted veggies or a chicken caesar salad wrap. Or put together a make-your-own pita or taco bar, and make different toppings/vegetables/sauces and everyone can serve him or herself.
