we have leftover pureed chicken and meat from WIC. my baby doesn't like it as is… she will not let me spoon feed her, and isn't willing to eat much of anything at this point (aside from rice cakes, pretzel rods and pasta, which don't count if you ask me!) I am hoping to make this into something she can hold and eat herself.
how can I make it into something she would eat? I am thinking along the lines of homemade chicken nuggets? maybe with eggs and matzo meal and seasonings? maybe with four? maybe breaded and baked after the mix ins?
would love to hear any suggestions!

That other stuff is real food too.
Yes, you have it, nuggets, with only a little egg but a lot of matzah meal.
I would soft-pedal the seasonings. They can be put on later if she finds it bland.
You could crush up the pretzels and roll the nuggets in the crumbs, maybe.

You can wrap up a spoon of the puree in wonton wrappers (spices optional), fold over and boil in water / chicken soup for a krepel type of food that she should be able to bite into.
Also, she might just prefer small pieces of regular chicken that she can eat on her own.

good idea! I have the puree to use up though (a lot of it) and she does like schnitzel and chicken pieces, but I want to use this up.
Heres what I did, and b"H it was a big hit with all of my kids- ages 5, 3 and under a year:
Chicken Patties (Pancakes):
1 2.5 oz pureed chicken
3/4 cup white whole wheat flour
1/8 tsp baking powder
1/4 tsp paprika
1/4 tsp garlic powder
1/8 tsp salt
pinch of pepper
1. combine all ingredients.
2. drop (1 heaping teaspoonful per patty) into preheated frying pan on medium flame, sprayed with pam.
3. let cook ~5 minutes and then flip over for another ~2 minutes
It made about 10 small patties. my 3 kids polished them off. they ate them more enthusiastically then they do milchig pancakes!
