If you have a food processor, all is easy.

You will need a large frying pan. A mesh splatter screen is handy but not essential. It is useful to have two spatulas.

Put some potatoes and onions through the shredding blade. The proportion is a bit more potatoes than onion. You are getting little sticks. This is the julienne blade. Some use Idaho baking potatoes unpeeled. Whatever. Potatoes.

Mix all that up with your hands in a bowl with some beaten egg. Not too much egg. Go easy on the egg.

Now dry this wet gloppy mixture up with matzoh meal, until it is dry enough to stay stuck to a large spoon held sideways.

Now fry it in oil. Fry by large spoonfuls in a quarter inch of hot bland oil, or any oil. Keep the window open, with a fan. Turn them once, when brown on the bottom. They are done when brown or brownish and don't fall apart.

Now salt them. They need salt. Not tooooo much salt. Careful. To taste. You might salt them LIGHTLY once on each side, as they cook.

Some people drain them on paper towels but lots of us just eat them.

Apple sauce, apple cider, and sometimes sour cream go well with them.

Olive oil has a low smoke point; another oil might be better.

Have a box of baking soda nearby in case of fire, but you won't have one.

Be very careful with the menorah. It is useful to have it on a large metal tray. Not near children or curtains.

If the large metal tray has little feet, so air can go underneath, it is even better.

Some people put the finished latkes on a warming tray.

6 potatoes
1 onion
2 eggs
2 tbsp flour (you might need to add more)
Salt and pepper to taste
Blend all in a food processor.
Heat oil in a large pan, once oil is very hot place spoonfuls of latke mix onto the frying pan and flip when golden. You may need to add oil as you go. Just made these and they're delicious!

Eta- lower the flame so they don't burn

Drain the potatoes well so it doesnt become mushy.

the best and easiest--

4 potatoes
small piece of a large onion
2 eggs
salt (about 1/4 of a teaspoon - taste a drop to see)

put all ingredients in a food processor
fry in a good pan with lots of oil - high flame
