I am planning on going on a Carnival caribbean cruise in January for 7 days (Sunday to Sunday) - which means over shabbos and we are leaving from Puerto Rico (not Florida). Any advice/tips to give?

I don't think you can get off the boat on shabbos. Most people I know who were on a cruise for shabbos, didn't end up doing much that day. eat, sleep, read.

Bring grape juice boxes as they will take away glass bottles ( even from your room).

Issues to look into:
Elevators on shabbat
Electric doors and keys
How/if you can have your food heated on shabbat
Candlelighting and Havdalah while following cruise rules

There are different opinions about all these things

r c has kosher frozen dinners if you give them notice they have a room to daven in
and sometimes give you kosher wine . you might be allowed to bring wine from home
the rooms have electronic doors .you cant light candles in youre room the fire alarm will go off .
you cant leave the boat on shabbos - choose a sunday to sunday cruise .
