Does anyone have a good tried and true recipe for sourdough challah? I have an established wild yeast starter I would like to use.
TIA

I did it as regular bread, basically.

Soak the starter overnight in 4 cups of warm water.
Add, 1 cup of oil, 1 c of sugar, 1 tblsp salt and flour until the right consistency. Then, it's like regular bread it just takes longer to rise.

Did you add all the ingredients to the overnight rise?

Then you do a regular set of 2 rises in the morning with the added ingredients? Does the dough braid?

Well, it depends on how fast the first rise is, sometimes if it's very slow I don't do a second rise. The consistency is like any other bread dough. I personally don't braid I make rolls the Moroccan way. 1 large one in the middle (Shabbat) and 6 smaller ones surrounding (weekdays)

I always wanted to learn how to make sourdough.
How do I get the starter?

You can either get from someone who has or make your own

I've done it in the past but it took a a VERY long time to rise (like 5 hours first rise, 3 1/2 -4 second) the added sugar and fat is hard on the starter. Honestly, I believe if you want to make a true "challah" you need to "spike" with commercial yeast. We do enjoy delicious sourdough loaves for Shabbos often, though. Don't NEED the actual challah shaped loaf. (We're not the it must be traditional chicken soup and Gefilte fish every week sort of family lol)
