What to do with griddle?

Macy's had a sale and I got a griddle, which is something I've always wanted. I wanted it for pancakes, which I make occasionally, but since I ordered it, I've seen people use it for fleishings - grilled chicken, as a blech on shabbos for cholent, etc.

I also don't know if I should save it for pesach, since I really do love cheese latkes and I only eat them on pesach.

Any suggestions?

I use mine for fleishig. From cooking the best skowcooked chicken in aluminum pan, to schnitzel, to yom tov for cooking\blech and so much more. We also take it along on vacations for cooking,shabbos and slow cooking all in one.

Hot cooked sandwiches? Skewered vegetables? Kebabs?

Maybe get two of them, one for fleish and one for milch?

A third for Pesach?

I love my Cuisinart Griddler. It washes easily.
