1/2 cup butter, softened
1/2 cup brown sugar, or to taste
2 large bananas, mashed
1 (4.5 ounce) jar baby food squash
2 carrots, grated
2 eggs, beaten
1 cup all-purpose flour
1/2 cup oat bran
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
I am planning on using less than 1/2 cup sugar and am using mashed butternut squash instead of baby food
I have no coconut oil and prefer not to use that much earth balance spread (too expensive to use in huge amounts) would applesauce work or should I use oil?

I always replace butter with oil. They're equally unhealthy!

I think I did use a little less...they were very moist since I used a whole squash. (a small one) I added chocolate chips....might as well call them mommy muffins, since I like them more than my toddler =)

for future reference, you can sub bananas for butter in equal quantities. obviously you will end up with a banana flavor, but the consistency will work nicely. since your recipe called for bananas anyway, it would have been fine.

I usually use a substitution of 1 stick butter / margarine = 1/3 c. oil (rather than 1/2 c.). If the recipe really doesn't work with substituting oil (haven't tried banana!), I find using a small quantity of margarine, ex. 2 T. earth balance + 2-3 T. oil can work (again, for 1 stick butter)
