Just saw your request for the barley pilaf recipe. Here it is:
Ingredients:
2 Tbs butter (I sub with margarine to make it non-dairy)
1 med onion, chopped
1/2 large red pepper, diced
1/2 lb mushrooms, sliced
2 cloves garlic, minced (I use the frozen garlic cubes)
1 1/2 cups pearl barley
2 cups chicken broth
1/2 cup white wine or more chicken broth
salt and pepper to taste
fresh parsley for garnish (optional)
1. Melt butter (margarine) in a saucepan over medium heat. Add onions, peppers, and mushrooms and saute for about 5 minutes; add garlic and cook about a minute more.
2. Add broth and wine (if using), and barley. Bring to a boil, reduce heat to low, cover, and cook 45-50 minutes until barley is tender and liquid is absorbed.
3. Season with salt and pepper. (Optional: garnish with parsley before serving.)
Makes 6-8 servings
